Reporting to the Executive Chef, the Banquet Chef is responsible for all aspects of food service for Banquets from menu planning to purchasing supplies to final presentation of the meal. They may be responsible for supervising cooks or other kitchen staff. They insure that the end product is to the client's requirements and satisfaction. They strive to model the Pursell Farms core values in the completion of their work.



  • Consults with and take direction from Executive Chef regarding specific events
  • Oversees the work of the Banquet team kitchen staff including evaluating work and providing coaching and direction
  • Meets with potential banquet clients to discuss menu options.
  • Demonstrates knowledge of a variety of food types to create appropriate menus for breakfast, lunch or dinner events
  • Develops menus based on client specifications and contracts.
  • Places orders for recipe ingredients including meats, fresh fruits and produce, herbs, spices and other supplies
  • Ensures that all standards of sanitation and safety are strictly observed.
  • Serves as role model for best utilization of resources while providing top quality products and services for clients.
  • Evaluates client satisfaction and makes note of how to continuously improve our products and presentations
  • Performs all other duties as assigned


  • High School graduate or equivalent GED required
  • Associate Degree from a Culinary Program with a specialty certification or proof of apprenticeship preferred
  • Five or more years of experience working as a cook or chef in a resort or restaurant setting


  • Must demonstrate leadership skills and capabilities
  • Must have the ability to multi-task while remaining focused on the goal.
  • Must have excellent verbal communication and leadership skills.
  • Be able to express creativity through food selections, preparation and presentation.
  • Must be detail oriented in completion of all tasks
  • Must be able to manage a budget
  • Must exhibit proper cooking techniques
  • Must be customer service focused
  • Must have the ability to remain calm in high stress situations.
  • Be able to solve problems quickly under pressure.
